This recipe is perfect for when you're craving a sweet treat but still wanting to stay on track with your meal plan and stick to your macros.
Strawberry cheesecake coffee cake
Ingrediants:
Topping
1/4 cup kodiak waffle mix
1 scoop Ice Cream Sandwich Level-1
1/4 cup brown sugar
1/2 tsp ground cinnamon
4 tbl cold butter, cubed
Cake
4 tbl butter, softened
1/2 cup kodiak waffle mix
1 scoop Ice Cream Sandwich Level-1
1 tsp baking powder
1/4 tsp baking soda
1 single serve unsweetened applesauce
1 egg
3 tbl egg whites
1 tsp vanilla extract
1/2 cup nonfat plain greek yogurt
4 oz ā fat cream cheese, cold and cubed
1 cup sliced strawberries
Drizzle
1/4 cup unsweetened almond milk
1 scoop Strawberry Milkshake Level-1
Directions
Preheat the oven to 350 and lightly spray a bread pan with non stick. Cut the butter into the topping ingredients with a pastry cutter and place in the fridge.
Mix the dry ingredients in one bowl. Whip together the butter, egg, whites, vanilla and applesauce WELL! Add 1/3 of the dry ingredients, MIX WELL and 1/3 of the yogurt, MIX WELL. Repeat 2 more times. Fold in the cubed cream cheese and strawberries.
Add the cake batter to the dish and top with the topping mix. Bake for about 50 minutes or until toothpick comes out clean.
Mix together the Level-1 and almond milk and drizzle over the top. Allow to cool completely and cut into 8 slices
