This recipe is perfect for when you're craving a sweet treat but still wanting to stay on track with your meal plan and stick to your macros.


Strawberry cheesecake coffee cake


Ingrediants:

  • Topping

  • 1/4 cup kodiak waffle mix

  • 1 scoop Ice Cream Sandwich Level-1

  • 1/4 cup brown sugar

  • 1/2 tsp ground cinnamon

  • 4 tbl cold butter, cubed

  • Cake

  • 4 tbl butter, softened

  • 1/2 cup kodiak waffle mix

  • 1 scoop Ice Cream Sandwich Level-1

  • 1 tsp baking powder

  • 1/4 tsp baking soda

  • 1 single serve unsweetened applesauce

  • 1 egg

  • 3 tbl egg whites

  • 1 tsp vanilla extract

  • 1/2 cup nonfat plain greek yogurt

  • 4 oz ā…“ fat cream cheese, cold and cubed

  • 1 cup sliced strawberries

  • Drizzle

  • 1/4 cup unsweetened almond milk

  • 1 scoop Strawberry Milkshake Level-1

Directions

  • Preheat the oven to 350 and lightly spray a bread pan with non stick. Cut the butter into the topping ingredients with a pastry cutter and place in the fridge.

  • Mix the dry ingredients in one bowl. Whip together the butter, egg, whites, vanilla and applesauce WELL! Add 1/3 of the dry ingredients, MIX WELL and 1/3 of the yogurt, MIX WELL. Repeat 2 more times. Fold in the cubed cream cheese and strawberries.

  • Add the cake batter to the dish and top with the topping mix. Bake for about 50 minutes or until toothpick comes out clean.

  • Mix together the Level-1 and almond milk and drizzle over the top. Allow to cool completely and cut into 8 slices
